What does "Boz pistachio" (green early harvest) mean? For traditional master bakers, fully ripened pistachios are considered unsuitable for fine baklava. When the fruit fully ripens on the tree and its shell turns reddish, the fat content increases significantly, the texture becomes heavier, and the vibrant green fades. In contrast, the "Boz pistachio" (Boz İç) is hand-picked before full maturity, while it still possesses its emerald green color and concentrated aroma.
Aroma, color, and fat balance The early-harvested Boz pistachio impresses with its intense, almost floral scent and its deep color. When baked, it retains its freshness without weighing down the pastry with excess oil. The characteristic nutty aroma of top-tier baklava comes precisely from these hand-selected kernels.
